Grape variety: 100% Pinot Noir Soil: This Pinot Noir comes from the clay-limestone terraces high in the Aude Valley between Carcassonne and Narbonne.
Yields are relatively low (50 l/ha).
Vinification: The wine undergoes malolactic fermentation in oak barrels to add complexity and elegance, the final combination is aged for 10 months, 90% in old oak barrels and 10% in new oak barrels, all from Same burgundy tonneliere.
Tasting Notes: Aromas of ripe raspberries with hints of plum and a hint of toast.
The palate balances ripe fruit and freshness with an alluring spicy smokiness.
Food and wine: Serve at 17 - 18°C with charcuterie, white meats (such as chicken in cream sauce) and light cheeses.

Grape variety: 100% Pinot Noir Flavor: This Pinot Noir comes from the clay limestone terraces high in the Aude Valley at the foot of the Pyrenees.
Yields are relatively low (50 hectoliters/ha).
The winemaking process for this Pinot Noir consists of a cold pre-fermentation maceration (about a week) and a week of fermentation at controlled temperatures.
25% of the final liquor is aged in oak barrels for 6 to 9 months.
Tasting notes:
Pinot Noir is dark in color with a ruby red color.
It has aromas of red and black berries mixed with floral notes and hints of delicate wood and vanilla.
Palate: Complex and long, it displays aromas of crushed black fruits (blackberries, cassis, cherries) and jam. The tannins are plump and well integrated.
Unlike many Pinot Noirs grown in Pays d'Oc, this wine is not overly ripe.
Food and wine pairing Serve at 17-18°C with charcuterie, white meats (such as chicken in cream sauce) and light cheeses.
