Soil: Both grapes come from the regions of Béziers and Carcassonne between Languedoc-Roussillon in the south.
Dry, cooler summer climate. Viognier grapes are grown on pebbled limestone soils and Chardonnay grapes are grown on stony limestone soils.
Vinification: Hand-picked, both grape varieties are lightly pressed and independently vinified.
Fermentation takes place at low temperatures in stainless steel vats to keep as much fruit as possible.
It is aged until the end of winter and then put into vats.
Then we blend the two wines.
Tasting Notes: This wine is beautiful golden with green undertones.
It offers praline and butter notes, crystalline lemon and orange peel aromas, and a very long and rounded palate.
The first smell is very aromatic, thanks to the aromas of dried apricots, bananas and pears that Viognier brings.
Then there are the subtle floral aromas of Chardonnay (white flowers, acacia) with citrus, pineapple and hints of oak.
On the palate it is round, with a persistent and fresh finish, with fruity aromas.
Food & Wine: This aromatic wine is easy to drink as an aperitif, paired with Mediterranean cuisine, salads, snacks and pizzas.
It can also be paired with seafood such as scallops, lobster or monkfish.
The optimum temperature is 12°C.
