One of Chile's most awarded Sauvignon Blanc wines. The Casablanca Valley, the cradle of this emblematic grape variety, has positioned itself as a premium valley for the production of cool-climate wines, just 18 kilometers from the Pacific Ocean.
Pairings: Lean fish such as ceviche are recommended in citric acid preparations. Leafy green salad with arugula and fresh cheese with lemon juice.
Serve between 5 and 7ºC
Cellaring : Best eaten within the first 2 years.
Tasting Notes A vintage that can be defined as a warm, sunny summer with a lack of water and a cool start to autumn, manifested in more mature aromas with more complex aromas that go beyond mere thiol expression. The latter always comes up and is a feature of our vineyards in the coolest part of the Casablanca Valley called Las Dichas.
In this vintage, however, thiol-derived aromatic compounds (passion fruit, grapefruit, cassis, cassis) are accompanied and complemented by subtle aromas of fig, apple blossom, pineapple and melon.
No shortage of more terpene aromatic layers with elegant citrus notes. As the wine spreads on the palate, the acidity stands out, important but pleasing. This is the structure of the wine, and then it fills the palate with a long finish and a clean, precise finish.
The taste matches the aroma and appears to be wrapped in an acidic structure.
