Daftmill is a farm distillery. Owned and operated by the Cuthbert family, it only operates during the farm's quieter times; mid-summer and winter, sometimes producing only 100 barrels per year.

When not distilling, Francis Cuthbert looks after the estate and grows the malting barley used to make this Lowland whisky.

Barley variety Optic was grown in fields in the south and harvested in the last week of August 2006.

It was then stored on the farm in the summer of 2007 for malting in Alloa.

The six first-fill bourbon barrels 040/2007, 041/2007, 042/2007, 044/2007, 045/2007 and 046/2007 that make up this bottling were distilled and filled prior to December 10, 2007. Pack.

Tasting Notes

Aromas of freshly baked sponge, cardamom and peach peel create a floral aroma reminiscent of gorse.

The palate is vibrant, with fresh herbs, fruit, toasted almonds and a juicy tangerine edge on the finish, plus a hint of spiciness from mashed banana.
