Maturity is a post-harvest spring combination cuvée with 10% of the reserve wine aged in barrels and casks.
A second fermentation in the bottle and maturation on it for at least 24 months, followed by a further 2 months after de-slagging. The low overpressure (5 atmospheres) in the bottle typical of Satèn gives it a creamy elegance.

Appearance: Soft cream mousse with long lasting cordon around glass; nice, lingering beads.

Color: Intense straw yellow.

Nose: Elegant, rich and multi-layered aromas of peach, apricot and tropical fruit, gradually becoming more intense, then edging into candied citrus fruit.

Palate: Intense acidity and savoury flavours, with full structure and firmness. The clean finish complements a rare and pleasant wine.

Pairings: The perfect aperitif, it goes well with light risotto and fish dishes. Recommended with Sauris, Parma or San Daniele hams and medium-ripened cheeses.

Drinking temperature: 6 - 8°C.
