The diversity of climatic massifs includes coastal Mediterranean, soft ocean, and inland Mediterranean, located at the foot of the mountains (450m), cool, favouring the purest aromas and slower ripening.
For the 2018 vintage, we blended 1/3 of the wine, fermented in selected French oak barrels, 900L in stainless steel vats.
Fermentation in barrels Aged at low temperature (18ºC) with the mother for 5 months, barreling once a week.
Bottled: April 2019.
Yield: 1587 bottles of 0´75cl and 73 magnums.
Tasting Notes Pale lemon yellow. Aromas of stone fruit (peach apricot), exotic (mango) on a background of freshly cut grass.
It wraps the mouth, but has lively acidity and a lingering finish.
Gourmet white meat, rice, fatty or grilled fish, cheese, spicy food, creamy sauce.
Features
Malvasia de Sitges is originally from Greece and is part of a very old group of Malvasias,
in very specific places (Sitges, Canary Islands, Banar Buffal, Madeira, Calabria,
Sicily, Sardinia, Croatia), but little known.
It is considered a recovering variety as only a few plantations remain (2.5 hectares, St Joan Baptista Hospital, Sitges) where it contributes to cultivation and processing.
