About twice as long (24-30 months) than usual Champagne or Reserva Cava,
It is definitely a work of sincerity. In addition to using the traditional "champagne brewing method", it is also an Organic (organic farming) 2017 Cava.
Tasting note:
Pale straw yellow in colour, the nose has aromas of white fruit such as apple and pear, fresh vanilla, lemon and citrus. On the palate it is fresh and clear, dry with a rich and soft foam, reminiscent of a "mousse". Moderate acidity with low astringency, lime and green apple flavours, with a hint of fresh minerality.
(Perfect for pre-dinner drinking to keep your appetite up!)
(This wine is a dry Brut Nature, sweet friends may find it a little less sweet)
Beauty match:
Appetizers, ham, smoked meats, sashimi, beef, pasta and cheese dishes.
(You can try it with Chinese New Year food, such as carrot cake and other fatty and savory food)
The recommended Cava aging time is 24 to 30 months, while the general Reserve series only needs to be aged for 15 months, which is almost double the aging time. From culturing, shaking the bottle, especially the secondary fermentation in the bottle and shaking the bottle in the later stage, the cellar workers will shake the bottle with half hands every day, so that the wine dregs slowly sink to the neck of the bottle, and then use the machine to remove the dregs and put the cork into the bottle. , reduce the consumption of liquor.
