Viticulture: The grapes for this wine are mainly sourced from selected vineyards in Stellenbosch, Paar and Swartland.
Due to the nature of the shrub's vines, the canopy is carefully managed to avoid exposing the bunches to too much sun and to ensure that the grapes ripen evenly.
The 2021 harvest is 10 days later than in previous years.
Mild summers and cool nights are the perfect ripening conditions for these shrub vines.
Vinification: All vineyards are harvested at optimum maturity and individually vinified.
All grapes undergo prolonged skin contact for 12 to 24 hours before the artesian juice is transferred to tanks for fermentation.
These wines are fermented at low temperatures using selected yeast strains to accentuate the specific characteristics of each vineyard.
After fermentation, the wine is exposed to the lees for four months before the final blend is put together.
Winemaker's Note: The taste of tropical stone fruit is accompanied by a burst of citrus in the mouth.
Great combination of amazing textures.
Better to drink immediately or cellar after about 3 years.
