Origin: Western Cape
Viticulture: Grapes are mainly sourced from Stellenbosch, but also from Darling, Durbanville, Elgin and Elimand Koekenaapon on the west coast.
The common denominator is that all the vineyards are located within 15 km of the ocean, so cool sea breezes and deep red soils result in moderate growth that provides good canopy development for optimal grape ripening conditions.
Plenty of rainfall and a very cold winter in 2020 created the perfect platform for an amazing year. In perfect ripening conditions, the harvest was 14 days later than normal.
Longer hang times combined with a very low natural pH result in a near-perfect harvest, full of aroma.
Vinification: All vineyards are harvested at optimum maturity and individually vinified.
The grapes are only picked early in the morning to ensure they arrive at the cellar in top condition and every effort is made to limit their exposure to oxygen.
All grapes are in contact with the skin for 12 to 36 hours, after which only the artesian juice is transferred to tanks for fermentation.
These wines are fermented at low temperatures with selected yeast strains to accentuate the specific characteristics of each vineyard.
After fermentation, the wine is exposed to the lees for four months before the final blend is put together.
Winemaker's Note: Intense tropical fruit aromas with granola and white peach. Intense and firm on the palate, with the ever-present herbal character of Sauvignon Blanc.
