Viticulture: The 2020 vintage is short and full-bodied, with Sauvignon Blanc being picked 10 days earlier than usual.

Moderate daytime temperatures and cool nights deliver amazing quality and intense flavor.

The wine is produced from select dryland vineyards in Stellenbosch (Firth of Forth), Durbanville and Darling.

Canopy management involves early sucking action and breaking leaves in the bundle area to provide the bundle with plenty of sunlight in the early stages.

Vinification: The grapes are picked early in the morning.

Every process from picking to bottling is ultra-reductive, and dry ice has been added to the vineyard's bins.

After de-stemming and crushing, we had skin-to-skin contact for at least 24 hours.

Only the free-flowing juice was allowed to settle for 1 day and then transferred to the fermentation vessel.

Inoculate selected yeast strains and ferment at 13°C.

The wine spends 7 months on the main lees before blending and bottling.

Winemaker's Note: Intense gooseberry, kiwi and intense herbal flavors.

The palate reveals the complexity of the mineral structure and green notes.
