Viticulture: Most of the fruit for this wine comes from our own vineyards, with some selected plots from other Stellenbosch vineyards.
2018 was another very dry season and a relatively warm winter.
This poses a number of issues that the winemaking team must manage carefully in the winery and blending process.
All in all, the grapes were very healthy at harvest and had a good concentration of flavours at harvest.
VINIFICATION : All vineyard blocks are harvested and vinified individually.
After hand picking, the grapes are sorted and transferred to "whole berry" tanks, i.e. without crushing.
During fermentation, the juice is pumped regularly for optimal color and flavor extraction.
The fermented wine is pressed and transferred to barrels for malolactic fermentation.
The wine is aged for 21 months in first (30%), second (30%) and third fill (40%) French oak barrels before the ingredients are mixed and ready for bottling.
Winemaker's Note: This wine is full-bodied, both on the nose and on the palate, with hints of ripe red fruit perfectly balanced with a hint of Finbos.
Subtle and juicy tannins give the wine its appeal alone or with food, where it makes a great accompaniment to a roast leg of lamb.
With careful cellaring, this wine can be enjoyed now or for the next 10 years.
