Flavors: This style is a blend of Merlot from different origins in the Pays d'Oc region.
There are two types of soils: acidic gravel soils in the valleys (which give the wines a smoky flavour), and clay-limestone soils on the slopes (which give the wines more body).
The average age of the vines is 10 years, pruned according to the «Gobelet» (freestanding) and «Cordon de Royat» methods (lattice).
Yields are relatively low: about 50 hectoliters per hectare.
Winemaking The winemaking process for this Merlot involves relatively long macerations and lightly carbonated macerations of the fruit.
A portion of the final cuvée is aged in oak barrels for 6 to 9 months.
Tasting Notes
The wine is very dark, almost black. Complex, rich and full-bodied, with flavours of dark fruit (ripe blackberries, cassis, cherries), jam and ripe fruit with a hint of spice (cinnamon, thyme).
On the palate, this wine is round, plump and long ("velvety") with ripe tannins at the end.
This is a well-balanced and easy-drinking wine.
Food and Wine Pairing
It is recommended to drink this wine between 17 and 18°C.
Perfect with traditional cooking or spiced food: stuffed tomatoes, lentils, bacon, steak, chicken with Provencal chowder.
