Flavors: This Pinot Noir comes from the clay-limestone terraces high up in the Aude Valley at the foot of the Pyrenees.
The vines are pruned according to the «Cordon de Royat» (lattice) and «Guyot» (lattice) methods.
Yields are relatively low (50 hl/ha).
The winemaking process to make this Pinot Noir consists of cold pre-fermentation maceration (about a week) and fermentation at a controlled temperature for a week.
The 25% final blend is aged in oak barrels for 6 to 9 months.
Tasting Notes
Our Pinot Noir is dark with a ruby color.
It has aromas of red and black berries mixed with floral notes and a delicate hint of wood and vanilla.
The palate is complex and long.
It exhibits aromas of crushed black fruits (blackberries, currants, cherries) and jam.
Tannins are plump and well-integrated.
Unlike many Pinot Noirs grown at Pays d'Oc, this wine is not overripe.
Food and Wine Pairing
Serve at 17-18°C with cooked foods, white meats such as chicken in a cream sauce, and light cheeses.
